Kovakkai Avial is an Indian vegetarian curry recipe prepared using Kovakkai. In Tamilnadu, we call it Kovakkai. Kovakkai is also known as Ivy gourd, Tindora and Dondakaya. It is a healthy vegetable that is used to prepare many recipes like Kovakkai avial, Kovakkai pachadi, Kovakkai Mor curry, Kovakkai fry, Kovakkai potato masala. Kovakkai avial is an easy veg curry recipe prepared as a side dish for rice. Kovakkai avial is prepared using Kovakkai, small onion, tomato, green chilly, coconut and some spices. First chopped all veggies. I chopped Kovakkai into lengthwise pieces. I like to chop it lengthwise you can chop as per your choice. First, cook all veggies and then add coarsely grinded fresh coconut and spices. Kovakkai avial is really very tasty to serve with rice and fish curry. Ingredients
  

  • 15 Kovakkai
  • 2 Tomato
  • 3 Green chilly
  • 1 cup Small onion
  • Salt (as needed)
  • 1 tsp Oil
  • ¼ tsp Mustard seeds
  • Curry leaves (few)

For grind

  • 1 cup Coconut
  • ½ tsp Jeera
  • 1 tsp chilly powder
  • ¼ tsp Turmeric powder
  • 1 tsp Coriander powder

Instructions

  • Cut Kovakkai into lengthwise pieces.
  • Ina mixer, add coconut, ½ tsp Jeera, 1 tsp Chilly powder, ¼ tsp Turmeric powder,1 tsp Coriander powder and the required amount of water grind it coarsely.
  • Heat oil ina pan. Add mustard seeds and curry leaves saute well.
  • Add choppedsmall onion and lightly saute it.
  • Add choppedgreen chilly saute lightly.
  • Add choppedtomato saute lightly.
  • Addchopped kovakkai pieces and saute it lightly.
  • Add grinded coconut and the required amount of salt.
  • Add water asneeded for cooking veggies.
  • Cover and cook for few minutes until it comes to thick gravy consistency.
  • Kovakkai avial is ready to serve with rice.

2.In a mixer, add coconut, ½ tsp Jeera, 1 tsp Chilly powder, ¼ tsp Turmeric powder, 1 tsp Coriander powder and the required amount of water grind it coarsely.

3.Heat oil in a pan. Add mustard seeds and curry leaves saute well.

Note

1.Don’t want to saute small onions till golden brown. Lightly saute it gives good taste.
2.Always grinding coconut coarsely. Don’t grind it smoothly.
3.If you like spicy curry, you can add more chilly powder.
4.Add water just above the vegetable is enough for cooking veggies.
5.Small onion gives good taste. If you like it add more small onions.
