Beetroot poriyal is a south Indian veg stir fry recipe prepared using beetroot, coconut and spices. It is an easy stir fry recipe prepared in few minutes. Beetroot is always a healthy vegetable in our kitchen. Beetroot stir fry is also aΒ healthyΒ stir fry recipe with a lot of nutrients. Beetroot poriyal is one of the bestΒ vegetarian recipesΒ and an easy side dish for rice. Choose fresh beetroot and add fresh coconut in this recipe gives good taste. Peel off the skin and chop the beetroot into small cubes. Not only cubes if you donβt like beetroot pieces you can use shredded beetroot also. Add very little water to cook the beetroot. If you add more water the beetroot will be overcooked. Then it doesnβt give the crunchy texture. Coming to onion you can use small onion instead of big onion. It also gives good taste. Donβt grind the coconut smoothly. This is the important step in this poriyal recipe. Beetroot Poriyal recipe | Beetroot Stir fry | How to make Beetroot Poriyal
Cookery ParkIngredients
- 2 cup Beetroot (chopped)
- 1 Onion (chopped)
- 2 Greenchilly (chopped)
- 2 tsp Oil
- ΒΌ tsp Mustard seeds
- Curry leaves (few)
- Β½ tsp Urad dhal
- Salt (as needed)
- Β½ cup Water (or as required)
To grind
- Β½ cup Coconut
- Β½ tsp Jeera
Instructions
- In a blender, add coconut and jeera grind it coarsely.
- Heat oil in a pan. Add mustard seeds, urad dhal and curry leaves saute well.
- Add chopped onion saute well.
- Add chopped green chilly and salt saute well.
- Add beetroot and saute for few minutes.
- Add Β½ cup of water for cooking beetroot.
- Cover and cook for few minutes on low flame.
- Dry well without water.
- Add coarsely grinded coconut and stir well.
- Healthy Beetroot poriyal is ready to serve with rice.
