Ingredients
  

  • 2 cup Ginger (chopped)
  • Β½ cup Coconut
  • 1 tsp Chilly powder
  • ΒΌ tsp Turmeric powder
  • Β½ tsp Coriander powder
  • Gooseberry size Tamarind
  • Salt (As needed)

For Tempering

  • As needed Oil
  • ΒΌ tsp Mustard seeds
  • Few Curry leaves
  • 1 Red chilly

Instructions

  • Peel off the skin and thinly slice the ginger.
  • Heat oil in a pan, add ginger and deep fry until it comes to golden brown.
  • Take it out from oil and allow to cool.
  • In a pan, add coconut and dry roast well until it comes to golden brown keep aside and allow to cool.
  • In a mixie, add roasted coconut, fried ginger, Chilly powder, turmeric powder, coriander powder, tamarind and water grind it into a smooth paste.
  • Heat oil in a pan, add mustard seeds, red chilly and curry leaves
  • Then add grinded paste and enough water stir well
  • Add salt as required and stir well
  • Cook well until it comes to thick gravy conisistancy
  • Ginger curry / Inji kootu is ready to serve with rice.

1.Deep fry ginger and dry roast coconut until it comes to brown colour.
2.Add salt as per your taste.
