The first process is to cut the cucumber into small cubes and cook it well. Then adding coconut, green chilly paste and cook well. Finally, add the flavourful seasoning into the curry. Mix well and serve with rice andΒ ginger curryΒ or pickle.

For cooking cucumber
- 1 medium size Cucumber
- ΒΌ cup water
- Salt (As needed)
For coconut paste
- 1 cup Coconut
- 1 Green chilly
- ΒΌ cup Water
For Tempering
- 2 tsp Oil
- ΒΌ tsp Mustard seeds
- 1 Red chilli
- Curry leaves (Few)
Instructions
- Peel off cucumber skin and cut into small cubes
- In a mixie, add coconut and green chilly grind it into a smooth thick paste
- Take a pan, add cucumber and water
- Cover and cook for few minutes until cucumber becomes soft
- Add grinded paste and salt cook well until it comes to thick gravy consistency and keep it aside
- Heat oil in a pan, add mustard seeds, red chilly and curry leaves
- Add this seasoning into the cucumber pachadi
- Cucumber pachadi is ready to serve with rice
