For cauliflower recipes, first, we have to blanch theΒ cauliflower. For that, we can put cauliflower in hot water for a few minutes and after that, we can use it for recipes. For blanching cauliflower
- 1 Cauliflower (medium size)
- 1 tsp Salt
- 1 tsp Turmeric powder
- Hot Water (as needed)
For masala
- 1 tsp Oil
- ΒΌ tsp Mustard seeds
- Curry leaves (few)
- Β½ tsp Jeera
- 3 Onion (chopped)
- 2 Tomato (chopped)
- 1 tsp Ginger garlic paste
- Β½ tsp Turmeric powder
- 1Β½ tsp Chilly powder
- 1 tsp Coriander powder
- Β½ tsp Garam masala
- Salt (As needed)
- Water (As needed)
- Coriander leaves (few)
Instructions
- First, cut cauliflower into small pieces.
- In a vessel, add hot water, salt, turmeric powder and add cauliflower pieces and kept it for a few minutes.
- After a few minutes, drain the cauliflower from the water and keep it aside.
- Heat 1 tsp oil in a pan.
- Add mustard seeds, Β½ tsp jeera and curry leaves and saute well.
- Add chopped onion and saute until it turns golden brown.
- Add ginger garlic paste and saute well.
- In a mixie, add chopped tomato and grind it into a smooth paste.
- Add this tomato paste to sauteed onion mix well and saute it for a few minutes.
- Once sauteed well, add turmeric powder, chilly powder, coriander powder, and garam masala mix well and cook for a few minutes.
- Add cauliflower pieces and saute for a few minutes.
- Add enough water and salt and mix well.
- Cover and cook for a few minutes. It should be thick gravy consistency.
- Finally, add chopped coriander leaves and mix well. Simple Egg curry is ready to serve.

Note
1.Adjust the chilly powder according to your taste. If you want spicy curry you can increase the chilly powder.
2.If you don’t want to grind tomato, you can use chopped tomato in this recipe. Tomato puree gives nice gravy.
3.Add water according to the thickness of gravy you want.
4.Cook this curry until it comes to gravy consistency.
