Coconut beetroot laddu is an Indian coconut balls recipe prepared using coconut and beetroot. This ladoo is one of the instant sweet recipes prepared within a few minutes. This ladoo is pink in color because we use beetroot in this ladoo. Normally coconut ladoo can be prepared with fresh grated coconut and sugar or jaggery. But jaggery is a healthy option. For this coconut beetroot ladoo, cook desiccated coconut/ coconut powder / fresh coconut and beetroot in milk and add sugar for sweetness. Add cardamom powder and chopped nuts mix together and make delicious ladoos. Normally coconut laddu is prepared with condensed milk. Here we don’t use condensed milk. Ingredients
  

  • 1 cup Beetroot (finely grated)
  • 1 cup Desiccated coconut
  • ¾ cup Sugar
  • cup Milk
  • ¼ cup Ghee
  • 1 tsp Cardamom powder
  • 10 Cashewnut

Instructions

  • Heat ghee in a pan.
  • Add cashew nuts and roasted it well. Take it out and keep it aside.
  • Add grated beetroot and desiccated coconut saute for a few minutes.
  • Add 1 ½ cup of milk and cook for a few minutes.
  • After a few minutes, milk evaporates and the beetroot mixture starts to thicken.
  • Add ¾ cup sugar and mix well.
  • After a few minutes, the sugar dissolves and it turns watery.
  • Stir well and cook this for a few minutes. After a few minutes, it starts to thicken.
  • Finally, add roasted cashew nuts and cardamom powder mix well.
  • Allow this mixture to cool.
  • Once cooled well, take a small portion out of this mixture and shape it as a laddu.
  • Roll the laddu into the desiccated coconut.
  • Delicious coconut Beetroot laddu is ready to melt in the mouth.

Note

1.You can increase or decrease the quantity of sugar as per your taste.
2.You can also increase the amount of milk, it gives a nice taste.
