For this boondi laddu first, prepare boondi. For that, first prepare batter using besan, baking soda and water. The batter should be liquid consistency but not too watery. Pour this batter Using aΒ skimmerΒ in the hot oil. Fry this boondi only half cooked. Donβt fry it as crispy. Then make a sugar syrup and add to boondi. Cookery ParkIngredients
- 1 cup Gram flour
- Baking soda (a pinch)
- Salt (a pinch)
- Yellow colour (a pinch)
- Water ( as needed)
- 2 tsp Ghee
- 10 Cashew nut
- 10 Raisins
- Oil ( for frying)
For sugar syrup
- 1 cup Sugar
- Β½ cup Water
- Β½ tsp Cardamom powder
- Yellow colour (a pinch)
Instructions
- In a mixing bowl, add 1 cup gram flour, baking soda, salt and yellow colour.
- Add required water mix well without lumps and make a liquid consistency batter.
- Heat oil in a pan.
- Pour the batter on the holed spoon or skimmer, spread it using another spoon.
- Fry boondis until cooked well. Donβt cook the boondis too crispy. If it is cooked too crispy sugar syrup doesnβt absorb well and the ladoo becomes hard.
- Fry all boondis and keep aside.
- Take a pan, add 1 cup sugar and Β½ cup water mix well.
- Add cardamom powder and yellow color mix well.
- Boil the sugar syrup until it comes to one string consistency.
- Add the sugar syrup to boondi mix well.
- Cover and keep it for few minutes.
- After few minutes, all sugar syrup is absorbed well.
- Heat ghee in a pan, add cashew nuts and raisins fry well and add it to boondi.
- Mix well and shape it as a ladoo.
- Soft and juicy boondi laddoo is ready to serve.

Note
1.The batter should be liquid consistency but not too watery. If it is watery add some flour and mix well. If it is thick and more water and mix well.

3.If fried boondi is too crispy, it is hard to make laddoo. So you can add boondi in a mixer and grind it coarsely and then shape it as ladoo.
